This SOP outlines the breakfast preparation and service procedure, including pre-service setup, guest interaction, order-taking, food presentation, and clean-up. Breakfast service runs from 7:30 am to 9:30 am.
Procedure Steps
☕ Step 1: Morning Setup
Prepare Coffee First:
Set the coffee machine first thing in the morning. This allows you to offer coffee to any early-arriving guests waiting for breakfast service to begin.
Set Up Tables:
Arrange all tables with the necessary items: sugar containers, coffee spoons, coffee jugs, and clean serving trays.
Prepare and place juice of the day (e.g., orange, grapefruit, or watermelon juice) in serving containers.
Prepare Fruit Plates:
Pre-prepare fruit plates based on the number of guests scheduled for breakfast. Each guest should receive a fruit plate immediately after ordering their drinks.
🍳 Step 2: Taking Guest Orders
Greeting and Order Process:
Greet Guests: Welcome guests warmly, saying, “Good morning! How are you today?”
Confirm Room Number: Politely ask for their room number. If the room is #14, #15, #6A, or #6B (Airbnb or VRBO guests), inform them that breakfast is not included, and menu items are $6 each, with coffee or juice for an additional $2.
Present Drink Options: Offer coffee, juice, or tea (emphasize the “or”). If they choose coffee, ask if they would like milk and sugar.
Place Drink and Food Order:
Serve the selected drink and ask for the guest’s breakfast order. Options include:
Gallo Pinto: Costa Rican breakfast with rice, beans, toast, an egg (fried or scrambled), fruit plate, and either cheese or salchichón.
Continental Breakfast: Two toasts, two eggs (fried or scrambled), marmalade, and fruit plate.
Banana Coconut Pancakes: Three small pancakes with banana and coconut, served with fruit and syrup.
For eggs, ask if they would like them fried or scrambled.
Input the Order:
Enter the order in the POS tablet and confirm the kitchen has received it.
🍽 Step 3: Serving Breakfast
Serve the Fruit Plate:
Once the order is placed, bring the pre-prepared fruit plate to the guest to make the waiting time for breakfast shorter.
Serve Main Breakfast:
After the fruit plate is cleared, bring out the main breakfast dish as ordered.
Check-In During the Meal:
Approach guests after they’ve started eating, asking, “How is everything? Can I get you more coffee or juice?”
🥂 Step 4: Post-Meal Service
Clear Plates:
Once guests have finished, clear their plates and ask if they would like anything else.
Additional Orders:
If guests request additional breakfast items, inform them there is an extra charge of $6 per additional breakfast.
Friendly Farewell:
Wish guests a great day, asking about their plans. This is an opportunity to mention available tours or activities if they’re interested.
🧹 Step 5: Clean-Up and Replenishment
Start Clean-Up by 9:00 am:
Begin clearing table setups and cleaning individual table tops on both sides.
Clean the coffee machine and refill sugar containers, preparing the machine for the afternoon coffee break.
Final Table Cleaning:
Wipe down all tables thoroughly and ensure serving trays are cleaned and ready for the next use.
